Coriander Lime mayonnaise....that sounds absolutely amazing and the avocado poppers are very creative. But, did you know its sacrilegious to cook the avocado in Mexico?? Don't worry I won't tell :)

Tried these and they were fantastic, as was the mayo! Any tips for the breading? I ended up with more breadcrumbs on my fingers than anything else haha :)
Haha tbh that's always going to happen a bit, but just try to wash your hands pretty often and just do a few at a time. Dump a few in the flour and coat them, then use one hand for egg and one hand for breadcrumbs to minimise cross-contamination! ;)
i looooove avocados so much! this looks perfect! i don't think i could even cook this as well as you did :) but id love to try it!
